I have a 2000 Jeep Grand Cherokee 6cyl with the following problems...

It is hard to start - always
Rough idle - always
Knocking or popping sound from engine - intermediate
Lacks power on acceleration, popping sound - intermediate
Engine light comes on and goes off

Recently changed the plugs, dont know what else to check.

What mfg and PN on the plugs? What were they gapped at?
Could you read the codes? I think you might be able to do the key dance.
And read the codes in the odometer. The procedure is to turn the key from the off position to on position 3 times (without starting the engine) within 5 seconds ending in the on position. The code should show up in the odometer. Too fast or too slow will not work.
If not take it to or borrow from AZ or OReilly's a code reader.
Post the codes back up here.

Could be a number of things.

The jeep was having this problem before I replaced the plugs. I do not remember the brand of plugs, nor do I remeber what I gapped them at. I used the specs from a Google seach for the gap. Ots been couple months now.

One person told me it might be a bad Cataylic converter, but I thought the problems would be constance, not off and on.

It could be clogged CAT

If you pull the upstream O2 sensor and symptoms go away its is likely the CAT.

Rough start and idle could be dirty air filter, IAC and TB.
Weak battery.
