Sounds like you're looking for some rocker guards. Take a look at this:
Bushwacker Part 14002 - Trail Armor Rocker Side Panels
They are just held on with tape. You can see the install directions here :

Personally, I like something more along the lines of body armor (true rock sliders that you can use offroad). I've got something like this:
GenRight Part RCG-2003 - Rocker Guards with Tubular Side Bar
Make sure to get all of the rust out before you put your diamond plate on though.

Covering up the rust with diamond plate or a rocker guard will only make the rust worse and will accelerate the rot. best bet is to get some rockers from JC Whitney, cut out the bad area, replace with good metal, get it solid, not really pretty then put on a rocker guard or cover.
