i use the highway a lot, to get between friends houses etc., i just got an unlimited 2006 model and i LOVE IT, i have yet to take it on the highway but how would it perform (i usually drive at 70mph but wil enjoy 80 time to time) but thats in a toyota highlander

My 2005 does fine on the highway, so I imagine yours would do better. In a Wrangler you tend to feel like you are going faster than you really are though!

What size engine did you get?

I see no reason for it not to do well on the highway. My TJ has a lift and larger tires and is still very well behaved. I suppose in the end it all comes down to the driver though.

I have a '94 4-banger with 4" lift and 31" tires, and I can do 70mph, so you should not have any problems doing 70. I would not recommend doing 80mph in a Jeep, not only because of safety (the jeep will hit 80mph, bt if you have to make an emergency manouver, you might find yourself in a bind) but also because of mpg (Jeeps have the aerodynamic characteristics of a large brick, so the faster you go, the less mpg you get, especially after 50mph or so).
