get the oilpressure tested with a mechanical gauge. its most likely a faulty sender but you can only rule it out with proper testing

there is more than one way for it to potentially be experiencing a lean condition, you may have to simply put a different set of injectors, or fuel pump and or fuel pressure regulator. right now i would start by testing the fuel pump pressure,
